All cheeses are served with minced olives, raw nuts in olive oil,
grapes, fruit chutney and a small basket of crackers and fresh sliced bague=

The fats and proteins in the cheeses and meats off-set the tannins and other
acids in the wines. The cheese “softens” the wine, in many case=

Any glass or bottle of wine will find its flavors reshaped by the cheeses, =

Point Reyes
Original Blue. Cream is separated from the cow milk, homogenize=
d and
mixed back into the skim milk. Starter culture, salt, Penicillium Roquefort=
and
rennet are mixed into the milk. After the curds separate from the whey, the
whey is drained from the curd and the cheese is “hooped” into 6
½ lb wheels. The cheese is cured for 3 weeks and aged for 6 months.<=

style=3D'font-size:10.0pt'>Produced from Jersey and Holstein cow milk, this
totally unique cheese resembles a cross between Parmesan and Gouda. Semi-hard texture, with a rich, =

flavor. Aged 4 – 6 months. Incredible.

Purple Moon. Aged in Cabernet Sauvignon
wine, this is amazing sharp cheddar that begs you to have it with a glass of
red wine. Fiscalini Farms work with their own raw-milk cheddar, which is ag=
ed 2
½ years. The cheddar on its own was voted “Best Farmhouse
Cheese” at the 2002 American Cheese Society Awards. This whimsical
variation is a knock-out.

Hudson Valley=
st1:PlaceType> Camembert.
Often called the “Queen of Cheeses”, this cheese was named by
Napoleon after the tiny hamlet of Camembert in Orne, France
where it originates from. Mild in flavor, soft creamy to buttery texture, w=

a “nutty” tanginess unlike any other soft ripened cheese.<=

Gouda Goat=
Cheese,
Henri Willig, Holland. One
of a kind, this goat’s milk Gouda
is a must try. Tangy, but mouth-watering and smooth. Since its introduction=

years ago, this unique cheese has been copied by others. However, this is t=

original, and this is still the best.

petite round is a 4-8oz small wheel of the cheese featured.
